Beef gyozas

Ingredients

Dough

  • 2 cups all-purpose flour

  • ½ cup hot water

Filling

  • 1 lb ground beef

  • 1 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tbsp sesame oil

  • 1 tbsp Shaoxing wine

  • 1 tbsp white pepper

  • 1 tbsp minced garlic

  • 1 tbsp grated ginger

  • 2 cups finely chopped cabbage

Dipping Sauce

  • ⅓ cup soy sauce

  • ¼ cup white vinegar

  • 1 tbsp of that NM chili oil

Instructions

1. Make the Dough

  • In a mixing bowl, add flour.

  • Gradually pour in hot water while stirring with chopsticks or a fork until a shaggy dough forms.

  • Knead the dough on a floured surface for about 8–10 minutes, until smooth.

  • Cover with a damp towel and let it rest for at least 30 minutes.

2. Prepare the Filling

  • In a large bowl, combine ground beef, soy sauce, oyster sauce, sesame oil, Shaoxing wine, white pepper, garlic, and ginger.

  • Mix in the chopped cabbage until evenly combined.

  • Cover and refrigerate while the dough rests.

3. Roll Out the Wrappers

  • After the dough has rested, divide it into 4 equal parts.

  • Roll each part into a log and cut into small pieces (about 1-inch wide).

  • Flatten each piece and roll into a thin circle about 3 inches wide.

4. Assemble the Dumplings

  • Place a small spoonful of filling in the center of each wrapper.

  • Fold the dough over the filling to form a half-moon. Pinch the edges to seal, pleating if desired.

  • Repeat with remaining wrappers and filling.

5. Cook the Dumplings
Option 1: Pan-fried (pot-stickers)

  • Heat a bit of oil in a non-stick pan over medium heat.

  • Place dumplings flat-side down and cook until the bottoms are golden brown.

  • Add ¼ cup water to the pan, cover, and steam for 5–6 minutes until the water has evaporated and the dumplings are cooked through.

Option 2: Boiled

  • Bring a large pot of water to a boil.

  • Add dumplings and stir gently to prevent sticking.

  • Boil for 6–8 minutes, or until they float and the filling is cooked through.

6. Make the Dipping Sauce

  • In a small bowl, mix soy sauce, vinegar, and chili oil.

7. Serve

  • Serve dumplings hot with dipping sauce on the side and drizzle some NM Chili oil on top for that extra kick ️‍🔥.
